Avocado Toast is still the hottest trend out there. Which makes sense because it’s delicious. But, let me let you in on a very similar but even more delicious variation that I made up for our last party: Avocado Toast Bruschetta.
In my brain, it was gonna be delicious. It’s basically mini avocado toast, right? Who wouldn’t love that?
Well, our vegan friend for one because my gut was to put parmesan cheese on it. So I didn’t. I decided to make this into vegan avocado toast bruschetta and wouldn’t you know, it was still devoured. People had multiple pieces (I’m taking four and five each), and it was the first appetizer gone from our party spread.
So yes, I’m pretty sure this is a party staple now. Even without cheese.
Avocado Toast Bruschetta
What You’ll Need:
- 1 loaf French bread
- 2 ripe avocados
- 2 Roma tomatoes
- Squeeze of lemon juice
- Garlic powder
- Salt
- Balsamic vinegar
What You’ll Do:
Pre-heat the oven to broil.
Slice the French bread into equal 1/4-inch slices. Set them along a cookie sheet and toast one side.
Flip the bread so the toasted side is down. Set the bread aside.
Scoop the insides of the avocado into a bowl. Mash it completely until the avocado is smooth. Squeeze in the lemon juice. Add garlic powder and salt. Mix together.
Spread a layer of the avocado mixture on to the toasted bread.
Dice the tomatoes and add them on top of the avocado mixture.
Drizzle with a little balsamic vinegar.
That’s it. The appetizer will take you a handful of minutes and will be a complete crowd pleaser. Just, maybe, double the recipe. That’s what I should have done for our last party.

Notes
You should broil three to four minutes on each side, but be sure to check because oven times can vary.
