I had a few free minutes the other day, so I decided it was time to make Mexican Hot Chocolate Chex Party Mix. I received the ingredients and recipe from Platefull Co-Op and the recipe said it would take 15 minutes, start to finish.
That’s the sort of recipes I like. Simple, quick and easy.
This one is so simple. It’s measure, microwave, and stir. That’s it. And it’s delicious. I ended up making enough to share with five people, and each one was impressed (so impressed that people went in for one bite and ended up taking handfuls after that first bite). It’s definitely a crowdpleaser and something you want to make for your next party.
Mexican Hot Chocolate Chex Party Mix
What You’ll Need:
- 2 cups Vanilla Chex cereal
- 2 cups Chocolate Chex cereal
- 2 cups Cinnamon Chex cereal
- 1/4 cup butter or margarine
- 1 cup semisweet chocolate chips
- 1/4 cup sweetened condensed milk
- 1 teaspoon ground cinnamon
- 1 cup flaked coconut
- 1.5 cups mini marshmallows
What You’ll Do:
Measure the cereal and put it in a bowl.
In a measuring cup, measure the chocolate chips. Add in a half stick of butter (I chop mine to help it melt). Microwave on high for one minute. Stir.
Pour in condensed milk.
Stir. Stir in cinnamon.
Pour the chocolate mixture over the cereal and stir until coasted. Microwave one minute. Stir. Microwave a second minute. Stir. Microwave a third minute. Stir.
Add in the marshmallows and coconut. Stir until combined.
Cool.
Serve and enjoy.
