I’ve said it a lot, but I am very extra when it comes to potlucks. I always bring a really cute treat with me.
So, when I was brainstorming what to do to bring to a recent summer potluck, I thought of making watermelon-shaped Rice Krispies Treats.
I’ve seen versions that are made in a round cake pan and cut into rounded triangles to look like slices of watermelon. Those are adorable, but you only get eight full-size treats that way. If you cut them in half, you can get 16 small slices, but if you’re going to a large potluck, like I always do, that’s not enough.
So, I make mine in a rectangular pan like traditional Rice Krispies Treats and cut them into 40 pieces.
You could shape these into triangles if you really wanted to, but I don’t. These still have the wow factor, but with way less effort.

Watermelon Rice Krispies Treats Recipe

Watermelon Rice Krispies Treats Ingredients:
You can get the full list of ingredients with measurements in the recipe card below.
- Butter – I always use unsalted butter because I don’t think these need any extra salt. But, if all you have is salted butter, that’s fine.
- Mini marshmallows – Mini marshmallows melt faster and easier than regular marshmallows do, so we prefer those.
- Rice cereal – Any brand of rice cereal works. We say Rice Krispies because it’s the most common, but I actually always use generic crispy rice cereal because it’s cheaper.
- Food coloring – You need red for the flesh of the watermelon and green for the rind. I use gel food coloring because the colors are more vibrant with less, but traditional food coloring works as well.
- Mini chocolate chips – These are the “seeds” of the watermelon. Alternatively, you could also use black sesame seeds. Those would look great, but chocolate chips taste better in dessert.
How To Make Watermelon Rice Krispies Treats:
I’m going to walk through the whole recipe, but essentially you’re making two batches of Rice Krispies Treats. One that’s dyed green for the rind and a second that’s dyed red for the flesh.
The measurements for this are written out in the recipe card below, but it’s essentially 1/4 for the rind and 3/4 for the flesh.

Melt the butter in a Dutch oven.
If you don’t have a Dutch oven, a large stockpot works. I just prefer the Dutch oven because the melted marshmallow comes off the enamel coating easier than it does from an anodized stockpot.

Add in the mini marshmallows.
Remember, you’re only using a quarter of them for this layer.

Add in the rice cereal.
Again, this is just a quarter of them.
Start mixing everything together.

When the marshmallows start melting, add the green food coloring.
Continue stirring until the marshmallows and rice cereal are completely combined and the green is evenly distributed.
If the marshmallows are melted, but the green isn’t coating the other ingredients, you can remove the pot from the heat and continue stirring.

Put the mixture in a pre-greased 13″ x 9″ rectangular pan.
Immediately fill the Dutch oven with warm water and dish soap. Let it soak while you do the next step. Then dry it completely.
If you get water and dish soap on it immediately, the marshmallow won’t stick and will be really easy to clean. The food dye also won’t color the Dutch oven this way.
Gently push the cereal mixture down into the pan and stretch it until it completely covers the bottom of the pan.
You don’t want to push too hard because that will break the cereal pieces and give you really tough treats.
Quick tip: I actually push it down most of the way, then I flip it. That adds a flat surface on top, which makes it easier to add the rest of the cereal.

Melt the rest of the butter in the Dutch oven.

Add in the rest of the marshmallows.

And the rest of the rice cereal.
Just like with the first layer, start stirring until the marshmallows start to melt.
There’s a lot more of the ingredients now than there was originally, so really make sure that you’re getting the rice cereal from the bottom of the Dutch oven. If not, they can burn.

Once the marshmallows are almost fully melted, add in the red food coloring.
Yes, it’s red food coloring. But, it will dye the rice cereal a light pink, which resembles watermelon.
Stir until the rice cereal mixture is completely coated in the food coloring.
Again, if this is taking a little while, you want to remove the Dutch oven from the heat so that the rice cereal doesn’t burn.

Once everything is combined, put the mixture on top of the green layer in the pan.
Immediately add hot water and dish soap to the Dutch oven, just like you did last time.
Part of the reason people don’t make Rice Krispies Treats is because the pan is a pain to clean if the marshmallow hardens. So, if you’re adding hot water and dish soap immediately, you avoid that headache.
Spread the pink rice cereal mixture into an even layer on top of the green layer.
Again, you don’t wanna push down too hard. If you really crunch the cereal, you end up with a really dense treat.
Let the Rice Krispies Treats cool.
Honestly, by the time I’m done washing the Dutch oven, the Rice Krispies Treats are cool.

Remove the treats from the pan and put them on a cutting board.
Use a sharp knife to cut 1-inch strips across the shorter end.
You could cut against the longer end, but I feel like it’s easier to keep the pieces even if you cut across the shorter end.

Cut each strip into four pieces.
Stick mini chocolate chips into the pink section of each Rice Krispies Treat.
Putting the mini chocolate chips into each treat one by one is pretty tedious, but it’s worth it to add seeds to your watermelons. You could leave the chocolate chips off and say it’s seedless watermelon, but you really do lose some of the wow factor that way.

Watermelon Rice Krispies Treats: Frequently Asked Questions
When I make these, so many people ask if they taste like watermelon and I say, “No, they just look like watermelon.”
You could add watermelon extract at the same time that you add the food coloring to add watermelon flavor to these. However, Rice Krispies Treats are such a classic taste, so I don’t think you need to add it. Plus, I’m not a big fan of buying an expensive ingredient just for one recipe.
If you do buy it, though, you could also use it in our watermelon cupcake recipe. That also just looks like watermelon, but I get a lot of questions if they taste like watermelon.
You can definitely make these ahead of time. They’re best that day or the next, but you can make them up to a week ahead of time.
Store any leftovers in an airtight container. You can leave it on the counter at room temperature. They’ll last one to two weeks this way.

- 7 1/4 cups mini marshmallows (split into 1 3/4 cup then 5 1/2 cup)
- 8 cups rice cereal (split into 2 cups then 6 cups)
- 1 oz. mini chocolate chips
Instructions
- Melt 1 T butter in a Dutch oven.
- Add in 1 3/4 c. mini marshmallows.
- Add in 2 c. rice cereal.
- Start mixing everything together.
- When the marshmallows start melting, add the green food coloring.
- Continue stirring until the marshmallows and rice cereal are completely combined and the green is evenly distributed.
- Put the mixture in a pre-greased 13″ x 9″ rectangular pan. Gently push the cereal mixture down into the pan and stretch it until it completely covers the bottom of the pan.
- Melt the rest of the butter (3 T) in the Dutch oven.
- Add in the rest of the marshmallows (5 1/2 c.).
- And the rest of the rice cereal (6 c.).
- Start stirring until the marshmallows start to melt.
- Once the marshmallows are almost fully melted, add in the red food coloring.
- Stir until the rice cereal mixture is completely coated in the food coloring.
- Put the mixture on top of the green layer in the pan. Spread the pink rice cereal mixture into an even layer on top of the green layer.
- Let it cool.
- Remove the treats from the pan and put them on a cutting board. Use a sharp knife to cut 1-inch strips across the shorter end.
- Cut each strip into four pieces.
- Stick mini chocolate chips into the pink section of each Rice Krispies Treat.
