I’m always looking for hearty side dishes to serve when we’re having company. There is a very good chance that our guests, who are over 21, will be drinking. So, I always want to make sure that we’re serving something that will sit in their stomachs and help absorb their drinks.
I always feel like pasta salad is good for that, but, unless I make it, I don’t really like pasta salad.
The exception to that though is one of my mom’s broccoli tortellini salads, which is delicious.
This recipe is not that. But, this caprese tortellini salad was inspired by that recipe.
It’s really easy to make. All you’re really doing is boiling pasta, making a super simple, homemade vinaigrette, and throwing everything in a bowl.
That’s pretty much it. There is a little chopping involved, but I mean, it’s minimal.

Caprese Tortellini Salad Recipe

Caprese Tortellini Salad Ingredients:
You can get the full list of ingredients with measurements in the recipe card below.
- Tortellini – Any variety of tortellini works, but we prefer spinach and cheese tortellini because it tastes good with the homemade vinaigrette.
- Cherry tomatoes – You could use grape tomatoes instead.
- Mozzarella pearls – We prefer the mozzarella pearls because you don’t have to do any cutting . You could substitute any other mozzarella, though.
- Basil – Fresh basil tastes better than dried basil in this recipe.
- Olive oil – Since this is coating your entire tortellini salad, you want to use a high-quality oil.
- White balsamic vinegar – This adds sweetness to the dressing
- Salt – Salt is to both season the pasta water and the dressing.
- Seasoning – Lemon pepper seasoning and Italian seasoning both season the dressing.
How To Make A Caprese Tortellini Salad:

Bring a salted pot of water to a boil.
Add the tortellini and boil them according to the package.
Quick note: Like I mentioned above, we use a spinach and cheese tortellini when we make this. I just think the additional spinach inside pairs really well with the fresh basil you add later. But, honestly, any tortellini filling works.
Drain the tortellini, then put it in a large serving bowl.
I serve it in a bowl that has an airtight lid because it’s easier to store leftovers that way, but you can use any bowl.

Cut your tomatoes into slices.
I usually cut each grape tomato into five equally sized pieces. You don’t have to be that meticulous about it, but I did want to let you know the size I cut them in case you wanted to make this recipe look exactly like my photo.
Add the tomato slices into the bowl.

Add the mozzarella pearls to the bowl with the tortellini and tomato.
Quick note: We use the smaller sized mozzarella pearls, known as “little ones,” because the tortellini that I use are a little bit on the smaller side so the smaller mozzarella matches better.
Of course, you could buy a block of mozzarella cheese and cut it into small cubes and use that instead. But, I try to make this as simple as possible because I’m usually serving it at a potluck I’m hosting where I’m already making a half dozen other things, so sometimes I need something easy.

Chop the basil into really small slices and add them to the bowl.

In a separate small bowl, whisk together the olive oil, white balsamic vinegar, and seasoning.
You want to whisk this vigorously (or at the very least stir it a lot) in order to incorporate the vinegar into the olive oil oil. If you don’t, you end up with the majority of the salad being coated in bland olive oil and that doesn’t taste as good.
Pour the dressing on top of the tortellini salad ingredients in the bowl.

Gently mix everything together.
You can either set this in your refrigerator until you’re ready to serve it or you can serve it immediately.

Caprese Tortellini Salad: Frequently Asked Questions
You can make this tortellini salad ahead of time.
The flavor is actually gets better when it sits overnight, so you can make it the night before a party. That makes your life easier because it frees you up to do everything else for your party.
If you make this ahead of time, just make sure to store it in an airtight container in the fridge.
Wait until the tortellini has completely cooled to room temperature, then put the entire tortellini salad in an airtight container and keep it in the fridge. It will last about five days that way.
Just keep in mind that the ingredients, especially the cheese and tortellini, will soften as they sit, so even though this is delicious the next day, after a couple days, it starts to get a little bit soggy.
This tortellini salad is good either hot or cold. The way I serve it just depends on where I’m serving it.
If I’m serving this at a potluck, I serve it cold. That’s mostly because I’m either transporting it or anticipating that it will sit out for a while, so I wanna keep it at the same temperature.
If I’m making this as a side for our dinner, to go with something like oven roasted chicken, I serve it warm.

- 20 oz. bag spinach and cheese tortellini
- 8 oz. cherry tomatoes
- 8 oz. mozzarella pearls
- 1/4 cup fresh basil
- 1/2 cup extra virgin olive oil
- 3 tablespoons white balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon lemon pepper seasoning
- 3/4 teaspoon Italian seasoning
Instructions
- Bring a salted pot of water to a boil.
- Add the tortellini and boil them according to the package.
- Drain the tortellini and put it in a large bowl.
- Cut the tomatoes into slices. Add the tomato slices into the bowl with the cooked tortellini,
- Add the mozzarella pearls to the bowl.
