I decided on Thursday that I was starting a diet the next day. My goal was to lose 20 pounds. I woke up Friday morning, had coffee for breakfast, a kale salad for lunch … and then I remembered I was making Halloween Fudge for a potluck that night.

So that’s the story of my longest, shortest, and only diet.

But the result is the fudge I made was delicious and I didn’t even feel bad about enjoying it … on account of that healthy kale salad for lunch that day.

It’s so easy to make and the perfect treat for your Halloween dessert. Plus, you might have everything on hand right now.

Pour it in an 8×8 inch foil-lined pan. Spread it so it fills the entire bottom of the pan. It will start to harden quickly (if you’re making this in the cold weather).

Put it in the fridge for 5 to 10 minutes, just until the top becomes hard to the touch.
