There’s a commercial on TV right now where they’re talking about pizza. Someone mentions a gluten-free crust and the commercial cuts to a New York pizza shop owner who puts his hands on the counter and says, “That’s not pizza.” And this is how I feel about this Ground Chicken Crust Pizza recipe.

It finally hit me that I was, actually, make a flattened chicken Parmesan. And, well, that’s not pizza.

When it was done, though, it looked like pizza. And when Pete came downstairs for dinner, he exclaimed, “Pizza!”

I told him, “That’s not pizza” and he said it looked like pizza. So I put three slices on his plate and asked him to try it. He asked what the crust was and I said he had to bite it and guess.

His pre-bite guess was cauliflower, but after he took an actual bite, he didn’t have a single guess.

“It’s chicken,” I said.

“That’s a good idea,” was his reply.

We finished the pie and I was convinced, still, that it’s not pizza. But Pete actually enjoyed it — and pizza is his favorite thing in the world (yes, I come second), so I guess it wasn’t that bad. It’s gluten-free and carb-free, so if you’re looking for a no carb pizza, a keto-friendly pizza, or a gluten-free crust like the girl in the commercial, this is a good alternative.

Pre-heat the oven to 400 F.

Mix together the crust ingredients (ground chicken, cheese, oregano, salt, and pepper) until you form a ball.

Put the ball on a piece of parchment paper spread the “dough” until you form a 1/2-inch thick circle.

It will be around 14-inches in diameter. Be sure that the middle and edges are all the same thickness so it cooks evenly.

I did this with a bamboo rice spoon, but you could either use your hands or a rolling pin.
