Bacon And Avocado Mayo Sandwich

sandwichPete loves to cook. He grew up watching his mom cook and it gave him the love for cooking. When we met, he kept saying he wanted to cook for me.

But then he got into the accident, and was really limited on what he could do. I went to hang out with him at his parents’ house (when he was still in the wheelchair) and he wanted to make me a sandwich.

This bacon and avocado mayo sandwich, that’s what he made me. Well, the version he could at the time. So this sandwich is really close to my heart.

We are three years removed from the accident and he is completely healed (thank goodness). When Good Cook challenged us Kitchen Experts to create our favorite sandwich, there was only one choice: Pete’s Bacon and Avocado Mayo sandwich.

Bacon And Avocado Mayo Sandwich

What You’ll Need:

  • Sprouts
  • 2 spoonfuls Mayo
  • 1 tomato
  • 1 small shallot
  • 4 slices of bread
  • 8 slices of bacon
  • 1 Avocado
  • 1 tbs. Italian seasoning
  • 1/4 lemon
  • pinch of salt (optional)

What You’ll Do:

Fry the bacon (try not to eat it all while you’re cooking it)

Toast the bread. We did it in a toaster oven and made sure one side was a little darker than the other. The darker side will be the inside of your sandwich. It gives it a bit more integrity.

Start putting together your avocado mayo.

Take one avocado, cube it, and scoop the cubes into a bowl. Add two spoonfuls of mayo. Mash with a fork until it is creamy.

Add juice from 1/4 lemon, Italian seasoning, and one small shallot, diced. You can add a pinch of salt to brighten the flavors if you want.sandwich6

Slice a tomato. We used the Good Cook slice precise to help us. This was the first time we used it, so we were a little unsure of what to do. But, it was easy once we got it. Stick the slice precise in the tomato and slice between the prongs to create even slices.

Assemble your sandwich. Top the bread with the avocado mayo, then tomato slices, four slices of bacon, and a handful of sprouts. Top with a second piece of bread.

Slice the sandwich in half  and enjoy.

If you can only finish half your sandwich, you can put the other half in the Good Cook deluxe sandwich keeper. I was really impressed with how the sandwich held up when I put it in the keeper. Seems like it would travel well too, if you wanted to have it for lunch at work or a dinner at an outdoor concert (which is where we generally have sandwiches).
