Deluxe Nacho Extravaganza

We went out to the bar last week to watch football and someone got nachos. They were good, especially compared to the rest of the bar’s offerings. The pizza there should not even be called pizza. It should be called excessive cheese on a paper-thin wafer. But, really, that probably wouldn’t fit on the menu. Or entice anyone to buy it. But, after the first look at the pie, well, you’d never buy it again.

And the wings, oh gosh, don’t even get me started on that.

So, needless to say, I had low expectations for the nachos. They were pretty good but Pete said he could do better. We decided to have Nacho Night, and he was right: He could do better. And he did. Follow this recipe, and you can do better too.

Deluxe Nacho Extravaganza

What You’ll Need:

  • Tortilla Chips
  • Shredded cheddar
  • Black Olives
  • Can of refried beans
  • 1 can (15.5oz) of kidney beans
  • 1 pound ground meat (turkey, beef, or chicken)
  • 1 can (8oz) sour cream
  • 3 Roma tomatoes
  • 3 jalapenos
  • 1 pack of Sazon
  • 1 small onion, chopped
  • 1 bunch green onions

What You’ll Do:

Open Wide!
  • Preheat oven to 350 degrees.
  • Get your chopping hands ready. Chop all your veggies.
  • Brown the meat for about ten minutes.
  • Add Sazon.
  • Add onion. Cook for another five minutes. Set the meat aside.
  • Add the refried beans to a pot or a pan. Wait until they loosen up and add a handful of shredded cheddar to the mix. Stir until loose. Set aside.
  • Line a cookie sheet with foil. Drop an entire bag of tortilla chips onto a pan. Evenly distribute meat, refried beans, sour cream, and the remaining bag of cheese on top. Throw this into the oven for about ten minutes, until the cheese is bubbly.
  • Remove from oven. Garnish with the jalapenos, tomatoes, olives, kidney beans, and green onions.
  • Serve and enjoy.
