Crock-Pot Apple Pie Cake

apple-pie-cake #applepieWhen Platefull Co-Op challenged me to be a part of the Pillsbury Bake Off, I was convinced I was going to make cookies. I haven’t made cookies in a while, and I really love baking them.

I have a great recipe for sugar cookies that I haven’t made in years, so I was really excited to receive a kit of items — and an excuse to make sugar cookies.

See, the thing with baking is that if I bake it, I’ll end up eating most of it myself. I didn’t want to eat a full tray of cookies with no reason, but to be able to post a recipe on the blog, well, that’s a good reason.

And then the kit arrived.

I was sent:

  • Reynolds slow cooker liners
  • Reynolds wrap
  • Reynolds parchment paper
  • Pillsbury flour
  • Cupcake wrappers
  • Vanilla
  • Coupon
  • Pillsbury Bake Off recipe book

I couldn’t get my mind off the slow cooker liners. I had heard of people making dessert in the Crock-Pot, but I never tried it. This sounded like a great excuse to try it. I looked online and found an apple pie cake recipe from Better Homes & Gardens, so I decided to make it.

Crock-Pot Apple Pie Cake

What You’ll Need:

  • 1 20 ounce can apple pie filling
  • 1/2 cup dried cranberries
  • cup all-purpose flour
  • 1/4 cup granulated sugar
  • teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • tablespoons butter, melted
  • 1/2 cup walnuts
  • 1 1/4 cups apple juice
  • 1/3 cup packed brown sugar
  • tablespoon butter

What You’ll Do:

Bring apple pie filling to a boil.

Add cranberries.

Pour the mix into a Crock-Pot lined with a slow cooker liner. These are amazing, by the way. I had never used them before and I can’t imagine cooking without them now. You can just pull them out of the Crock-Pot and it’s clean. Now that’s easy clean up.

Stir together flour, salt, sugar, and baking powder.

Add milk and melted butter. Stir until doughy.

Stir in walnuts.

Evenly spread the doughy mixture over the apple mixture. Spread this out really evenly. It will be sticky, but letting it clump will ruin it.

Bring apple juice, butter, and brown sugar to a boil.

Pour over the mixture in the Crock-Pot.

Cook on high for 2.5 hours. Cool before serving (with ice cream, at least, that’s what I did).
