Foil-Packet Grilled Vegetables

Whenever my mom comes, she always brings a salad, so at least I know there will be at least one healthy option. On July 4th, though, my parents were out of town, so I had to make sure to make a healthy side dish. I decided to make foil-packet grilled vegetables. They are so great and really easy to make, especially if you already have the grill going.

What You’ll Need:

  • 2 zucchini
  • 2 yellow squash
  • 3 cloves of garlic, chopped
  • Salt
  • Pepper
  • Dried oregano
  • Olive oil

What You’ll Do:

Clean and chop your zucchini and squash and put them in a bowl.

Add the chopped garlic.

Drizzle with olive oil, then season with salt, pepper, and dried oregano (I use fresh dried from our garden).

Toss to make sure they’re coated.

Put the vegetables onto a piece of foil. Fold in two opposite sides, then roll up the other two sides.

Cook on the grill for about 20 minutes or until the vegetables are fork tender.

    I love this time of year when the squash is on in the garden and there are so many different fresh veggies available. Cooking them in different ways is always a fun challenge for me. Thank you for sharing the foil packet grilled veggies recipe.
