This magazine is great, if you don’t already know. The magazine has recipes (that are amazing!), articles about women who have lost the weight (and their inspiring before and after photos), and more.

I also have a recipe for Weight Watchers-friendly Funfetti Muffins. They’re all really great recipes because even though I call them muffins (since that’s how they were introduced to me), they’re sort of like cupcakes without the frosting. I’ve used a similar recipe to make Mint Chocolate Muffins too.

Carrot Cake Weight Watchers Muffins (1 Points Plus Value)

My friend Jennifer gave me a recipe for her lemon Weight Watchers muffins, but I hadn’t ever made them. Lemon was never my thing. But her muffin recipe was simple. You can combine any cake mix and any yogurt. I had a box of carrot cake mix in the pantry because it’s Pete’s favorite. But we were never going to eat a cake just the two of us, so I left it for a while.

And then I thought about this recipe.

Carrot cake Weight Watchers muffins sounded perfect. And they were. I made them and we had them for breakfast every day until they were done. They were absolutely delicious (and made me so excited to know I have a box of butter pecan cake mix in the cabinet too. I’m making those next).

Carrot Cake Weight Watchers Muffins (1 Points Plus Value)

What You’ll Need:

  • One box carrot cake mix
  • One 5.3oz cup of Yoplait 100 Greek yogurt (vanilla)
  • One cup water

What You’ll Do:

Pre-heat the oven to 350.

Carrot Cake Muffins

Combine all the ingredients in a bowl.

Spray a mini muffin pan with cooking spray. Fill each cavity halfway.

Bake for about 10 minutes. The carrot cake muffins will be light and fluffy.

The batter makes 48 muffins, so you’ll either want two mini muffin pans or you’ll have to bake two batches.

Just a small note, since this recipe is almost two years old. At the time, this was 1 Weight Watchers Point. The points system has changed since then. Some new members are using this point system still and others are using Points Plus. I would suggest you double check with your current system before adding this to your day.
