Fiesta Chicken Quesadillas

It’s my favorite type of restaurant to go to, and it’s my favorite food to cook at home too. When we go out to eat, I love authentic Mexican food that I can’t replicate at home. At home, I can get the flavors pretty good, but it still has more like an American-Mexican feel to it. I’m okay with that, especially when I make something like these Fiesta Chicken Quesadillas.

I made them for dinner recently and raved about them all through dinner. Which I guess is pretty egotistical but sometimes, when you nail it, you nail it.

Fiesta Chicken Quesadillas

What You’ll Need:

  • 3 chicken breast tenderloins
  • 1 orange pepper
  • 1/2 medium onion
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 tablespoon adobo seasoning
  • Pinch of salt
  • Pinch of pepper
  • 1/2 bag of habanero and jalapeno shredded cheese

What You’ll Do:

Heat the olive oil over medium-high heat.

Slice the pepper and onion into strips. Saute them in the olive oil until they are tender, about 15 minutes.

Add the garlic, then sautee about two minutes.

Slice the chicken into thin strips and add to the pan. Add the adobo, salt, and pepper. Saute until the chicken is cooked through, about five minutes.

Remove everything from the pan, remove the pan from the heat, and wipe it down.

Put it back on the heat and put in one flour tortilla. Top with cheese and heat it until the cheese is slightly melted.

Top with half the chicken mixture. Add a bit of cheese on top of it and top with another tortilla.

Flip it and cook it on the other side until the cheese is melted. You’ll cook about two to three minutes on a side, then flip it.

Cut into six even pieces and serve with rice and beans (you could also serve with sour cream, salsa, or guacamole too).

I’ll be honest: I never liked fresh pasta. It just always tasted so off to me, which is a hard thing to describe, but that’s the truth. All these high-end restaurants making fresh pasta not to my taste, but Pete’s recipe is so good. He makes it often, and I just love it. He uses the same dough recipe for spaghetti, lasagna noodles, and ravioli, too — and it’s amazing every time. Pete used it over the weekend to make ravioli stuffed with my favorite kale pesto. What a delicious dinner!

Homemade Kale Pesto Ravioli

What You’ll Need:

For the ravioli:

  • 3 1/2 cups flour
  • 4 eggs
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 8oz. ricotta cheese

For the kale pesto:

  • 2 cups kale, packed
  • 1 clove garlic
  • 1/3 cup walnuts, chopped
  • 2 tbsp. lemon juice
  • 1/2 cup olive oil
  • 1/2 cup grated parmesean
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

What You’ll Do:

Make the kale pesto.

Beat the eggs. Put the eggs, flour, and salt in a stand mixer and beat on low for about two minutes.

The dough may be crumbly. Add a bit of water and mix again.

Cut a chunk of dough and roll it through your pasta maker. Roll it until you reach your desired thickness, then cut the sheet in half.

Put a few dollops of kale pesto on one half of the dough. Add a dollop of ricotta, then, cover that with the second piece of dough. Using a ravioli cutter (which is amazing because it pinches it closed for you) cut the ravioli.

Continue until you’re out of dough.

Boil them in boiling water for three minutes. Drizzle with oil olive and a dollop of kale pesto, then serve.

She laughed, then told me it’s pico.

I knew that. I was just hoping maybe I could get away with calling it salsa. No such luck. I then had to ask her for her salsa recipe. It was amazing — and super simple, so, of course, I was kicking myself after for spending money on jarred salsa all these years. Never again. From now on, it’s salsa from scratch. It barely took me longer than ten minutes to make this (which, honestly, is about the length of time it takes me to open a jar of salsa).

  • Handful of cilantro
  • Generous pinch of salt
